Abstract: Using the hospitality industries in Italy, Denmark and the United States as case studies, this thesis looks at the reasons why common globalising pressures in the labour market are absorbed in such diverse ways by individual states. Findings from this thesis raise challenges for modern policymakers who most commonly position labour market management at the top of the policy agenda. Policies do change, but their impact is less profound and pervasive than the deeper, ongoing social forces that are discussed in relation to the specific countries in this thesis.
