Abstract: | The article discusses how the basic design principles of stone ovens were partly preserved in the form of Scotch ovens. Made out of brick with forged iron fittings, their stone sole and crown absorbs a great deal of heat during the heating process which ensures efficient baking. In Australia, Scotch ovens were the commercial bakery's standard for over a century and are still being used by modern-day bakers. Their history, genealogy and their link to the tastes of the past are also explored. |
